Papaya extract is extracted from Unripe Carica Papaya fruit through solvent extraction. Main active ingredient of the extract is Papain, also know as papaya proteinase.Papain is a wihte powder, soluble in water and glycerol, hardly soluble in organic solvents, such as ethanol, chloroform and diethyl ether. Papain is a cysteine protease enzyme, characterized by high enzyme activity and good thermal stability. Papain is widely used in food, pharmaceuticals, feeds and industrial products.
